Can Disney animate fight scenes like the Japanese?
No. They can do them better. Take a look at the final battle of The Great Mouse Detective for a quick example. It doesn’t have any flashy effects and is slow, but still manages to be epic because it doesn’t need flashy effects or high-speed. You can feel every blow and every emotion; the pain and fear in Basil is done fantastically as he frantically tries to get away from an unstoppable opponent.
Can Disney Write Stories FOR ADULTS?
Yes. Fantasia. While there’s nothing in it that is bad for kids, it was very clearly intended for an adult audience (bonus points in that it came out in a time when animation was strictly intended for young audiences). It goes beyond even being just an adult piece; it’s a work of art. Even then all-age Disney tends to be more adult than “adult” anime to begin with. Especially with fight and death scenes. Disney knows how to evoke any emotion without being so blatantly adult that kids can’t enjoy it, which is something I’ve never seen an anime pull off (except for Studio Ghibli but we’ve already established they’re in a completely different league than anime).
