A familiar is a very different entity from a pet. Notice how Twilight referred to Owlicious as a pet, but not Spike? Spike and Twilight’s relationship goes far deeper. He’s essentially her lifelong companion, though he might have outlived her before she ascended.

You make it sound like she was his pet. The same way dog moms call their pets their ‘babies’. Kinda creepy dude.
You do understand that she didn’t just watch his hatching, right? She was asked to cast on a dragon egg, and not only did her magic make it hatch, it made him grow into Spikezilla. This wasn’t a dragon egg that was going to hatch at any time. They wouldn’t use such a thing for a test.
And you’re correct, while she was very young, his care would not be in her hooves. But as she grew and moved out of the family home and into the library, they would have had nobody but each other to tend to.
She very much had a hoof in his raising, her was her dragon, her familiar, her number one assistant, and yes, in a very real way, her son. He was all of these things, including little brother, and friend.
Relationships are complicated.
If a 6 year old was there when a baby bird hatched, she’d be responsible as a pet owner or something. But no one would trust a child to raise a sentient being, certainly we wouldn’t let them be considered the baby’s mother if we could help it. Older siblings often help parents raise the younger ones but we would never let said child be the primary caregiver if much better options are available, especially ones who wouldn’t be conducive to raising the baby in a healthy environment. Pre FiM twilight was a super introverted bookworm who lacked basic social skills and who was the personal student to the nation’s ruler at the latter’s school for child prodigies. Little twi would have had plenty on her plate, why give her a kid to raise on top?
Oh I have zero doubt Velvet and Night Light helped a great deal, as did Celestia. But that doesn’t mean Twilight herself wasn’t also regarded as a parent figure, as those lines clearly show. Velvet probably encouraged him to call her Gramma, because let’s face it, there was no guarantee her bookish little girl would settle down with anything other than a good book.

Oh, absolutely, but do remember, Twilight hatched him. So, if you have a person who hatched you, and raised you, that’s the closest thing to a mom you have as an orphan, even if when you were younger you thought of her as being like a sister. That’s what you call a complicated relationship.
Older siblings can raise younger siblings without being their parents.
I still don’t get mama twilight headcanoners. Why let a kid with zero social skills who just got accepted to the most advanced school in town raise a kid when she has two loving and reliable parents (night light and Velvet) who can do it instead?
Which is an excellent way to explain your reasoning, but it’s not the show shooting down the mother son dynamic. That’s your interpretation, which is the very definition of headcanon.
You say it’s suggestive, I personally see that she had a direct influence in his hatching, had a huge influence on his upbringing, and then of course, there was the scene:

You’ll note he’s not calling her sister, he’s saying she raised him. Yes, he regarded her and Shining as siblings as they were growing up, but she is a parent figure to him as well.
There’s an entire episode about how Spike specifically views Twilight and Shining as his older siblings, with Twilight referring to him as their little brother as well. Anything before that that could paint them as mother and son is suggestive at best.
The show never shot that down, they just showed it’s more complicated than merely that. She hatched him, so of course she feels a little motherly, but she was very young when it happened, so the brother sister dynamic applied as well.
It’s weird people are still pushing that headcanon when the show literally shot it down, but I guess some people are stubborn.
